Tasty And Healthy Vegan Mushroom Recipe

The most recent in my chain of healthy vegan recipes is the vegan mushroom recipe, which makes a delectable appetizer and could be made into a meal by setting the stuffed mushrooms on a cradle of greens or grains.

As a relatively solitary representative in our diet from the fungi family, mushrooms bring a very different nutrient profile from mainly other vegetables. They are considered as a significant component of healing in Chinese medicine.

Prep Time: 10 min. Cooking time: 35-40 min. Time from start to eating: 45-50 min. Makes enough for 12 mushrooms.

Vegan Mushroom Recipe Ingredients

15 medium mushrooms

1 small yellow onion, chopped

1 tsp olive oil

1 clove garlic, minced

1 tsp dried thyme (or 1 Tbsp fresh)

2 Tbsp red or white wine

3 Tbsp water

1 bunch chopped fresh spinach leaves

Sea salt to taste

1/4 cup ground toasted almonds

Salt & pepper to taste

1 Tbsp nutritional yeast (optional)

Vegan Mushroom Recipe Directions

1. Pull the stems off the mushrooms and then chop them up, set them aside. Get rid of any dirt from the mushroom tops.

2. In a large pan, saute the chopped onion in olive oil until translucent, then the garlic along with chopped mushroom stems and thyme.

3. After the stems are soft, deglaze the pan with wine (red or white gives an exceedingly different flavor, but whatever you prefer), and then add water.

4. Add the mushrooms into the liquid mixture in the pan, heads down, and spoon a bit of the liquid over them. Let them cook in the liquid for about 5 minutes.

5. As they simmer, grind the toasted almonds in a blender, coffee grinder, or food processor. In a small bow, mix the ground almonds with salt, pepper and, or as desired, nutritional yeast. You can also use pre-ground almonds for this recipe, but they won?t have as much flavor.

6. Take the mushrooms out of the pan, and add the spinach to the pan. Sprinkle with salt, allowing the spinach to just wilt.

7. Stir in the almond mixture after taking the pan off the heat.

8. Fill the mushroom caps with the filling, then put in a single layer on a baking dish and bake in a preheated oven at about 350 degrees F for 15-20 minutes. The mushrooms should start to turn golden, and the stuffing will start to brown.
